Chicken-and-stuffing casserole, canned, pureed, organic sweet potatoes (don't bother buying these ), and green beans.

Dh and J had fish and chips, X and I had meat pies and chips. We'd had the beef strog for lunch and I figured one big meal was enough for the day.

Monday was Noodles and Meatballs
Tuesday was Lasagna
Wednesday church night so easy Sloppy Joes and Corn
Thursday is youngest daughters b-day so it will be chicken and rice casserole with broccoli/cauliflower with cheese corn cupcakes with ice cream for dessert. I love love love that she picks broccoli/cauliflower when she has a choice of vegs.

I baked chicken for the man, and made spinach salad and hummus w/whole grain pita.

I browned some ground beef, then added onion, red bell pepper, mushrooms, zucchini and yellow squash; basically what I had left in the fridge that needed to be cooked up. I cooked some whole wheat elbow maccaroni, then put it in a casserole dish. I added a can of tomato sauce and put the meat and vegetable mixture over the maccaroni, then baked it for 20 minutes at 350 degrees. Everyone liked it and we will have left overs for lunch tomorrow.

Kylie, That is an interesting meal. Did you eat at home?
