It's been my experience that pumpkins last pretty well as long as you don't carve them, but within a few days of carving they are toast (or moldy mush, to be more correct). I think that pumpkins last longer in cold, dry country...but then that could be either because my memory is faulty or they were frozen. Suggest waiting until Halloween day to carve your pumpkins (or the day before at the earliest). If you want to decorate with pumpkins before Halloween, then paint the faces...this allows you to use other materials for hair, etc. And if you do it properly, you might even be able to still carve the pumpkins on Halloween without it looking strange. (or paint one side, then carve the other)
